Sushi-quality tuna, marinated (8h, vacuum sealed) in a mixture of: soy sauce, rice vinegar, rice wine, sherry.
Taken out of the marinade, dried with kitchen towel cut in strips.
The strips then were put in a very hot ceramic pan on all sides for a second or two to have just the outside (1 mm) cooked.
Then the strips were covered with roasted white and black sesame seeds and cut in dices.
Served with a Honey-Tamarind-Dressing (with the same ingrediends as the marinade) and fried slices of cucumber.
Thunfisch: 8h in Beize (Sojasauce, Reisessig (chin.), Reiswein, Sherry), danach trockentupfen, in Streifen schneiden, sehr kurz in sehr heißer Pfanne von allen Seiten erhitzen, dann mit Sesam "panieren" und in Würfel schneiden.
Gebeizter Thunfisch mit geröstetetem schwarzen und weißen Sesam an einem
Honig-Tamarinden-Dressing mit gebratenen Gurkenscheiben.
