Monkfish on Red Rice - Seeteufel auf rotem Reis

Pan-fried Monkfish with fried spring onions on red rice and wild garlic pesto.
Rosemary-tomato and blanched celery sticks as side.

Cod loin, cooked sous vide, with a dill-mustard-creme (made of Noilly Prat, crème fraîche and Dijon with garlic and scallion) on red rice. Fried cocktail-tomatoes and snow peas as side.

I removed the skin and vacuum sealed the salmon fillet. 20 minutes at 60°C in the steamer and it was done (well done). The skin was fried seperately.
Salmon fillet on wild rice served with steamed black raddish (marinated in white balsamic vinegar, turmeric, ginger and cinnamon) on fried chicory.

Again: very tender, very delicious but overdone. And the coagulated protein doesn't look very nice. (I now know, how to avoid that)
